As you read this article reprinted from Fancy Food Magazine, “think outside the basket” with these back to school lunch box ideas.

Liven up Lunch Boxes with Distinctive Snacks, National Association for the Specialty Food Trade Offers Picks for School

With the school year about to begin, the National Association for the Specialty Food Trade is presenting suggestions to liven up lunch time, whether with new twists on nut butters or convenience packs of emerging favorites like hummus.

“Kids Lunch Box Snacks,” a new article on foodspring.com, the NASFT’s website for consumers, presents top picks from four specialty food retailers. Their choices favor items that are organic, healthful and locally made. Yogurt is hot, and so are nutrition and cereal bars. Retailers report that parents want easy-to-pack choices, but also want larger sizes to re-pack themselves.

Among the picks on foodspring.com are Stringles from Organic Valley, fruit and nut bars from KIND, Chocolate Alphabet cookies from Newman’s Own, and individual packs of Cheddar Cheese Crackers from Late July.

“Specialty food makers are increasingly catering to children as Mom and Dad become more adventurous in their own food choices,” says Ann Daw, president of the NASFT. “Parents want to share the excitement of great food and new flavors with their kids.”

According to NASFT research, sales of specialty foods that are lunch box staples showed big growth last year in the $63 billion specialty food industry. From 2007 to 2009, sales of yogurt and kefir shot up 38.6 percent, and sales of chips, pretzels and snacks grew 15.4 percent.

Parents can add some star power to lunches by selecting honorees from the NASFT’s 2010 sofi™ Awards for the outstanding specialty foods and beverages of the year. These 140 products were selected from 2,257 entries by specialty food experts. They represent the best of the best across 33 categories, including, Outstanding Snack Food, Outstanding Cookie, Outstanding Jam, Preserve, Honey or Nut Butter. “sofi” stands for Specialty Outstanding Food Innovation.

sofi honorees kids might like include:

* Food Should Taste Good, Inc.: Multigrain Tortilla Chips in snack packs
* Tate’s Bake Shop: Whole Wheat Dark Chocolate Cookie
* Nutorious: Cranberry Orango Tango nut mix
* The Mediterranean Snack Food Company: Baked Lentil Chips – Sea Salt
* Mrs. May’s Naturals, Inc.: Premium Crispy Fruit Chips – Pineapple
* Vermont Smoke and Cure: Natural Pork and Beef Cracked Pepper Snack Stick
* Rigoni Di Asiago USA: Nocciolata Organic Hazelnut Spread.

No matter what school year your children are in, offering them healthy food choice alternatives makes perfectly good sense.   Whether they are newly enrolled college Freshmen or returning students, think about periodically sending them a “Dorm Gift Basket” filled with healthy treats and school supplies.   Especially during exams.   We’ll ship your gift basket right on time for them to go to the head of the class.   Baskets by Consuela specializes in custom gift baskets for every occasion.  Visit us online at http://www.basketsbyconsuela.com and http://giftbaskets.cartfly.com for more gift ideas.

Easter Parade

Easter Morning

Easter Gifts

Chocolate bunnies, marshmallow chicks and dyed eggs are some of the elements associated with celebrating Easter Sunday. Another thing I associate with the day is the Easter Parade along 5th Avenue in New York City. It has been awhile since I attended one. New Yorker’s love their parades. There is one for almost every occasion. Streets are often closed for miles around so that people can feel free to stroll alongside the marchers or floats.

I’ve been a resident of Georgia for nearly 15 years now. In that time, I haven’t attended many parades here. I only recall seeing one back in 1996. Why that is I don’t quite know. I do know that there is a certain excitement generated when parades are held. Children as well as adults seem to enjoy being onlookers. Families have a chance to gather together for little or no cost.

I am sure it takes a lot of work to orchestrate these events. But remember, we held the Olympics here. They were successful. Why not an Easter Parade?

At Baskets by Consuela “we think outside the basket.” Not just when it comes to designing gift baskets but with thinking up fun and enjoying activities for the family too.

More ideas for Easter here. Hop to it!

Housewives of Atlanta meets Baskets by Consuela

Last weekend I attended The Female Success Factor forum in Atlanta.  I met one of the stars of The Real Housewives of Atlanta television show, Ms. NeNe Leakes.   She is on a tour to promote her new book.

NeNe shared with the audience how she landed the part on the show.   She also spoke about some of the challenges she faced as a young mother while raising her oldest son.   I found NeNe to be warm, funny and engaging.   When I stood next to her to take this photo, she quipped “you’re so tiny.”   My daughter also says that to me whenever I stand next to her. Next time I meet someone taller than me I think I’ll stand on a box.

The Atlanta show’s ratings are very high compared to the other “Housewives” series.   I’m sure much of its popularity is due to NeNe’s quick retorts and to the point remarks. She can certainly hold her own.   Let’s watch the reunion episode to see what’s brewing.   No doubt it will return for future episodes. Hopefully, they will have some events that will require gift baskets so Baskets by Consuela can make a guest appearance.   I would love to show them how “we think outside the basket.” NeNe, Sheree, Kim, Kandi, Dwight….Housewives call me!

Thoughtful Gift

Thoughtful Gifts

As busy consumers we have less time than ever to travel to brick-and-mortar stores to shop.  Online purchases had soared to record numbers in years past.  However, according to an eMarketer Digital Intelligence report, US e-commerce sales in 2008 were $133.6 billion but dipped slightly to $133.1 billion thus far this year.  A small decline that perhaps indicates people are still spending but watching their wallets.  They are looking for ways to save some money.

The good news is the current economic downturn has more and more of us spending time at home with family and friends.  Enjoying home cooked meals and good conversations are great ways to bring a sense of calm into our lives.  Focusing less on the day to day angst of the world’s money woes creates a sense of balance that we all need right now.  Taking the time to reflect on what you have instead of what you don’t have or what you may have lost.  Creativity is at an all time high.  Here are five-money saving ideas that will not only cost little to nothing, they will also help lift your spirits:

  1. Soak and relax in a warm aromatherapy bubble bath;
  2. Eat dinner by candlelight;
  3. Play some relaxing music instead of watching television;
  4. Read one of your favorite books again; and
  5. Take a long walk or stroll through a nearby park to enjoy the natural surroundings.

If you still find the urge to be out in the marketplace with the crowds here are some things you can do to stay on track while you’re shopping.   First, write the names of your gift recipients on a list.  Next, decide what your total budget will be and stick with that amount.  Finally, along side each person’s name assign the dollar figure you will spend for their gift.  Here are a few ideas to consider.  You can probably find most of these gifts for fewer than ten dollars each:

  • Fresh flowers from your local market;
  • Box of chocolates (neighborhood drug stores even carry a quality selection);
  • Bottle of wine;
  • Bestseller Book;  (check the sales tables of your local bookstore); and
  • Doggie or cat treats or toys for their pets (most pet owners love to spoil their pets).

You can be thoughtful without breaking the bank.  I hope these suggestions are helpful.   For more gift ideas visit http://www.basketsbyconsuela.com.  Any gesture is better than none at all.  We all appreciate being remembered in times of trouble, celebration or just because.   Thoughtfulness is a gift we all can afford to give.

Power of the Spoken Word

There is power in speaking life into your dreams or personal wishes.  At the beginning of the year, I was sharing with a friend that I wanted my business to be featured in the media.  First in the newspaper, then on the radio and last but certainly not least, on TV.  I saved TV to do last because I felt by the time I was in front of the camera I would be a bit more prepared and a little less nervous.

It’s true when you’ve heard people say “be careful of what you ask for.”  The bible says to make your requests known to God.  Well from my mouth to God’s ears He heard my request(s).

When I sent out my first Press Release in February to a local newspaper, little did I think that the editor would call me.   She not only called but asked if she could interview me.  She and her photographer came to my studio the week before Valentine’s Day.  It was good timing and perfect coverage for my business.  That first step confirmed that God was indeed listening to me.

On Thursday, May 7th at 7:30 a.m.  I got a call from an author and radio host, Antonio Smith his book is The Sellionaire.  He asked if I would be willing to come on his show the following morning.  For some reason, I didn’t hesitate to accept.   Again, I have to believe that God was in the design of this too.  The show’s producer sent me some info to go over around 9:30 p.m.  Wanting to be fully prepared, I was up late going over the info.   There is no mistake that the timing of this event coincided with business exposure for  Mother’s Day (okay God you do listen to prayers).

I arrived at the station with more than enough time to spare.  Even after missing my turn and being a bit delayed.  Actually the producer drove to a nearby landmark to meet and guide me to the station.   I greeted the host and briefly sat for less than 20 minutes.  Before I knew it we were ready to begin.  We walked into the studio to go on air.  I said a small prayer requesting the right words to come out of my mouth.  I didn’t want to stutter or stammer.  By no means did I want to be guilty of any repetitive ums  ums while speaking.  In less than 5 minutes they began the countdown and we were on the air.

My mother would have been proud.  She always stressed the importance of diction and pronunciation.  We were never allowed to use certain words like “aint” or “gonna.”  All those times she corrected my and my siblings speech paid off.  When I heard the playback of myself on the air, I was pleased that I didn’t make any of those mistakes.

I am now preparing myself for my TV debut.  I’m thinking that will happen sometime in July.  Probably close to my birthday.  You’ll have to keep reading this blog or follow me on Twitter or Facebook to see which show I’ll be on.  Now that’s not conceit but belief and confidence in the power of the Almighty.  He truly knows the desires of each of our hearts if we only trust in Him.

Thanks again to Antonio Smith for paying attention to what God whispered in his ear about me being a guest on his show today.   Thank all of you for always listening to what I have to say, even when you’ve heard it before.

In closing, I want to say listen to your mother.  The power of the spoken word is so important.  From your mother’s mouth, to God’s ears to your own voice people will remember you for not only what you say but how you said it.

Happy Mother’s Day Mom, I paid attention:).  Love Consuela

Ode to Rosa Lee

Who is Rosa Lee you ask?  A little background first.  She was born in Hampton, VA on November 20, 1931 to Leona Perry and Oliver Alston.  The third of six children, Rosa weighed nearly 11 pounds at birth.  She was a girl with dreams that never really got fulfilled because her destiny changed at the tender age of 16 when she had her first child, Lois.  Soon thereafter another daughter was born (who was almost named Linda) and then 13 months after that her son, Ernest entered the world.

One can only imagine how difficult times were for this 18 year old.  Now newly married to a young man that wasn’t quite ready for the responsibility of a wife and three children.  For Rosa, however, probably the hardest thing for her to do was to leave the marriage and forge ahead on her own with her three young babies.

She was determined to raise her children with advantages she herself did not have.  Her high school education was never completed so she demanded that her children complete theirs.  In the 60’s that had much significance.  Unlike today where you need more than a college degree to land many jobs.  Nonetheless, each child did obtain their high school diploma.  One even went on to college for a short stint.  For that, Rosa Lee was very proud.  She felt a sense of accomplishment as she well should have.

Her children were required to not only be respectful of themselves but to others as well.  Rosa Lee, was a character builder.  Loyalty and honesty were both important to her.  You had to tell the truth and be responsible for your actions.  Otherwise, as she stressed, you suffered the consequences.  Instilling this daily, her children would often hear “if you are right, I’m with you, but if you are wrong, you are wrong by yourself.”  Rosa Lee herself was very frank.  If you asked her for an opinion, you were certain to get a truthful answer.   Knowledge or truth will stand the test of time.  No matter how much time passes.  Rosa Lee departed this earth on January 2, 2008 with a proud legacy of standing on the truth.

In closing, Abraham Lincoln said it best, “all that I am and hope to be I owe to my dear mother.”  Who is Rosa Lee you ask?  She was my mother.

With love enduring eternity, Consuela
